ÙMMARA – Winery with Kitchen.

Under the light-filled baroque shadow of Scicli, in the local Sicilian dialect known as “ùmmara,” there is a place where you can gather to taste historic wines and bold experiments, savor traditional dishes and reinterpretations, all while spending pleasant moments in the spirit of conviviality. Ùmmara Vineria with Kitchen is all of this and much more. Founded in 2016 by the overwhelming passion for good things and the love for natural wines of its owner, Giuseppe Fiorilla, Ùmmara makes its guests feel at home, turning every moment spent at its tables into a unique experience.

THE WINERY

Ùmmara houses an incredibly rich wine list, born out of respect for the land, the work, and the palate. Giuseppe Fiorilla loves to discover and share with his guests the small producers, incomparable creators of spontaneous fermentations, guardians of biodiversity, and often protectors of viticultural heritage at risk of extinction. Thus, in the numerous labels from various parts of the world, you find the stories of passionate winemakers who are able to enhance the varietal components of their wines to the fullest. The wine list at Ùmmara becomes the map of an exciting journey, aimed at revealing grape varieties and terroirs with a millennia-old history.

CUISINE

The dishes by Chef Roberta Padua are not only the result of skill but also of passion and care, because it is believed that food enjoyed in good company represents the sharing of cultural and identity values. Behind the dishes at Ùmmara is the same philosophy that drives the wine list, which inspires the creation and sharing of what Ùmmara defines as its “manifesto of culinary and oenological identity.” Drawing from the island’s gastronomic tradition, the cuisine goes beyond: from Sicilian to Middle Eastern or Japanese cooking, always seeking authentic genuineness from around the world, then carefully bringing everything together with care and a light heart.

Food enjoyed in good company, paired with an excellent glass of wine, is the sharing of cultural and identity values. Tasting it while listening to the voice of the person who produces the wine becomes an unforgettable experience. Ùmmara often organizes, on a monthly basis, events with winemakers: social dinners around a single table, to deepen the knowledge of a winery through tastings of all its wines, paired with dishes specially prepared for the occasion by Chef Roberta Padua. Attending these dinners with the winemakers is like embarking on a journey that spans kilometers, starting from Scicli and continuing without territorial limits.
